Grilled (broiled) Fish
One of the easiest ways to cook fish is to grill it (called broiling outside Australia). This is usually done under an exposed element in an oven. Grilled fish is quick, easy, and usually healthy as any fat present drips through the grill rack.Grilling can be done with the oven door open for older style ovens, or with the oven door closed, called fan grilling, in modern multifunction ovens.
Cooking times will depend on the thickness of the fish and the distance it is from the heat source. Work on 10cm distance as a guide. Fish will need to be turned half way through the cooking time if it's an open oven grill, but doesn't need turning if it's being fan grilled in a closed oven.
Fillets and steaks can be grilled from frozen and will take approximately 18-20 minutes to cook. Whole fish is best thawed in the fridge before grilling. Always choose firm fish for grilling.
Method
- Move your oven rack to the highest position.
- Preheat your oven to 180°C.
- Line a cookie sheet with aluminum foil.
- Rinse and pat dry the fillets.
- Place the fish on the sheet, skin side down (if your fillets have skin).
- Bake fillets for 10 to 12 minutes.
- Change the oven setting to static or fan grill and increase the temperature to 200°C and cook for 3 to 5 minutes, watching closely.
- The fish is done when the top is browned and the fish flakes with a fork.
- Remove fish from the baking sheet with a sturdy metal spatula.
