Caramelised Balsamic Vinegar
Caramelised balsamic vinegar is basically reduced balsamic vinegar to which sugar may be sometimes added. The caramelisation process is basically a thickening of and concentration of the balsamic till it sweetens naturally by the reduction. It is a much sweeter vinegar and is ideal as a component of salad dressings, to add to foods, especially fruits and as a marinade for meats. It's also delicious in olive oil for dipping bread.
