Raisin Cheesecake
This recipe is a lovely variation of a basic cheesecake. You can also make it as an unbaked cheesecake if you'd prefer. It's a delicious dessert to have for Easter Sunday.
Ingredients
- 1 qty Cheesecake Filling
- 1 qty sweet Biscuit Base
- 1 cup raisins
Method
- Preheat the oven.
- Line a spring form pan with aluminium foil on the base; spray the internal side of the pan with cooking spray.
- Line the sides (if desired) and base of the pan with the crumb base and bake in the oven for 20 minutes.
- Make the cheesecake filling according to the recipe and when completely mixed stri throught he raisins.
- Pour the mixture onto the biscuit base in the pan and return to the oven for 45-50 minutes.
- Cheesecake is cooked when a skewer inserted into the centre comes out clean.
- Serve with fresh cream, a berry coulis or fresh berries.
