Barbecued Stone Fruit
These are fabulous cooked on the
barbecue providing it has a lid, or just in the oven. You can use any
stone fruit and they all taste great. If you don't have any
maple syrup,
golden syrup works too. The
amaretti biscuits really make it, but they're not easy to find. They're not always carried in supermarkets, so you might need to go to more upmarket delis. Harris Farm Markets usually have a variety.
Method
- Preheat the barbecue or grill to high.
- Halve the fruit and remove the stones, then place each half cut side up.
- Combine the ricotta, hazelnuts and maple syrup in a bowl then fill each fruit half's cavity with some of the mixture.
- Place the amaretto biscuits and butter in a bowl and mix to combine then sprinkle a little of this mixture on top of the ricotta mixture on each fruit half.
- Place each half of fruit on the barbecue or grill and cook for 15 minutes or until the fruit is tender. If you grill has a top, the cooking time maybe less.
