Beef and Guiness Pot Pie
Beef and Guinness Pie brings together two of Ireland's most famous products,
beef and Guinness in a hale and hearty pie. The long-slow cooking of the filling creates not just perfectly tender
beef, it also allows the flavor of the Guinness to permeate the
meat and the
vegetables and produce a thick, luscious sauce.
Method
- Make the stew, adding the fresh herbs as well, and cook for the recommended time in the recipe.
- The sauce should be thick and tasty.
- Season again with salt and pepper if necessary.
- Preheat the oven.
- Put the meat filling into a large baking dish or even out amongst 6 ramekins.
- Roll out the pastry if you've made your own, or cut the sheet of frozen pastry slightly bigger than the circumference of the dish/dishes.
- Brush the rims of your dish/dishes with beaten egg, then place the pastry on top, squashing the extra pastry on the outside of the dish to secure. Lightly score the top of the pastry and brush with more egg.
- Place on a baking tray (to catch the drips) and bake in the middle of the preheated oven for 45 minutes until golden and bubbling.
- Let it cool down for 10 minutes before serving.
