Corn-Fed Chicken with Lemon Pepper
Ingredients
- 1 whole corn-fed chicken
- 50g butter
- Rind of 1 lemon, grated
- Olive oil
- Flaked salt, to taste
- Freshly ground black pepper, to taste
Method
- Pre-heat oven.
- Mix butter and lemon rind, adding one tablespoon of lemon juice and salt and pepper to taste.
- Loosen skin from chicken, slipping fingers between skin and flesh.
- Spread the butter mixture under the skin.
- Rub remaining butter mixture over chicken.
- Roast for 1 - 1.5 hours, basting every 15 minutes.
- To check chicken is cooked, pierce the thigh with skewer and check the juices are clear.
