Corn-Fed Chicken with Lemon Pepper

Method

  1. Pre-heat oven.
  2. Mix butter and lemon rind, adding one tablespoon of lemon juice and salt and pepper to taste.
  3. Loosen skin from chicken, slipping fingers between skin and flesh.
  4. Spread the butter mixture under the skin.
  5. Rub remaining butter mixture over chicken.
  6. Roast for 1 - 1.5 hours, basting every 15 minutes.
  7. To check chicken is cooked, pierce the thigh with skewer and check the juices are clear.
