Watermelon, Olive and Feta Salad
This is one of my most favourite salads. Great this time of year when watermelons are in peak season. It needs to be eaten fresh though, doesn't keep well, and I use caramelised balsamic vinegar the flavour is just beautiful. Try it with a Danish feta too, it's soft and quite salty but really contrasts well with the watermelon and olives. Manzanillo olives work best.
Ingredients
- 2 cups seedless watermelon, cubed
- 250g feta, cubed or crumbled
- ½ cup black olives, pitted
- ½ red onions, diced or sliced thinly
- 1 Tbsp mint, chopped
- Olive oil, to taste
- 2-3 Tbsp balsamic vinegar
Method
- Combine the cubed watermelon, cubed feta, pitted olives, chopped onion and chopped mint in a bowl.
- Add enough balsamic vinegar to coat the ingredients.
- Drizzle the entire salad with olive oil and mix to combine.
- Serve immediately.
